Seven Caves is San Diego rum, made about fifteen minutes up the road in Miramar. Founder Geoff Longenecker — a longtime attorney and home brewer with a culinary background from growing up in Louisiana — started the distillery in 2016 as a passion project built on a simple conviction: rum can be far more dynamic and delicious than the sweetened, mass-produced stuff most people know. The name comes from the sea caves of La Jolla. Everything is grain-to-glass and made in what the distillery cheerfully calls ludicrously small batches, sometimes yielding only 25 to 30 gallons. The flagship Barrel Aged Rum, built from Louisiana cane sugar and molasses fermented with dunder and aged in new charred oak, took a bronze from the American Distilling Institute, and Seven Caves has been named one of the nation's top craft rum distilleries in the USA Today 10Best contest. From there it gets genuinely adventurous: the Black Label series, including a seven-year rum finished four years in a bourbon barrel; a Jamaican-style overproof; Madeira and sherry finishes; and an Exploratory Series running through jasmine tea rum made with Paru Tea Bar, blood orange rum, mead barrel aged rum, and roasted peanut rum.
