Seven Caves Spirits is Geoff Longenecker's distillery in a Miramar warehouse in San Diego, founded in 2018 by a longtime attorney and homebrewer who also serves as president of the San Diego Distillers Guild. Longenecker works in batches rather than fixed flagship products, pairing different sugars and yeast strains to get distinctly different rums, and his core releases are single-barrel rums aged in new American oak with nothing added. Orange Rum is one of his Exploratory Series releases: a 100% molasses rum distilled at the Miramar warehouse, left unaged, and flavored with San Diego citrus, using both fresh oranges and oranges dried in-house from local sources, then bottled at 40% ABV (80 proof). There is no added sugar or artificial flavoring, so the orange comes through as peel and zest rather than candy, over a clean molasses base. It is built for mixing: it makes a Daiquiri or a Rum & Coke taste like someone squeezed an orange into it, it works as the rum in a Mai Tai or Planter's Punch, and it can stand in for orange liqueur in a rum-based Margarita.
