Seven Caves Spirits Jasmine Tea Rum

Seven Caves Spirits is Geoff Longenecker's distillery in a Miramar warehouse in San Diego, founded in 2018 by a longtime attorney and homebrewer who also serves as president of the San Diego Distillers Guild. Longenecker works in batches rather than fixed flagship products, pairing different sugars and yeast strains to get distinctly different rums, and his core releases are single-barrel rums aged in new American oak with nothing added. Jasmine Tea Rum is part of his Exploratory Series and started as a collaboration with PARU Tea Bar, the San Diego tea shop: an in-house distilled high-ester rum, the funky, aromatic style of rum that carries flavor well, infused with jasmine tea and bottled unaged at 80 proof (40% ABV). High-ester rums are the funkier, more aromatic end of the category and carry an infusion well, and the jasmine is steeped into the finished spirit rather than added as flavoring, with no added sugar or color. It makes a different kind of Daiquiri, works in a highball with soda or tonic, and holds up in tiki builds where a floral note is wanted.
