Smokeye Hill is the bourbon brand of Hazelwood Spirits Company, founded by Blake Johns and named for a hill on the Johns family ranch where moonshine was run during Prohibition; lawmen friendly to the family reportedly tied bells to the cattle to warn of raids, hence the bell-shaped bottle. The Barrel Proof is the flagship four-grain bourbon with nothing taken out: distilled by MGP in Lawrenceburg, Indiana, from a proprietary mash of heirloom blue corn, yellow corn, rye and malted barley, then barreled, aged and bottled in Colorado Springs at 6,100 feet, where the thin, dry air concentrates the spirit. It matures more than five years in 30- and 50-gallon new American oak barrels and is bottled uncut and unfiltered at whatever strength comes out of the wood, which varies by batch (one competition batch came in at 67.1% ABV, about 134 proof). The producer describes dark caramel, chocolate-covered dark fruit, crème brûlée and burnt sugar on the nose, a full-bodied, viscous palate of raspberry, dark cherry, plum, maple, peanut brittle, caramel and vanilla wafer, and a long, intense, sweet finish.
