Spirited Union is Ruben Maduro's Amsterdam distillery, opened in 2019 near Amsterdam Central and run by head distiller Marjolein Pot, which builds botanical rums the way a gin distillery builds gin: by distilling and infusing fruit, peel and spice into aged rum rather than neutral spirit. Queen Pineapple, sold in Europe as Queen Pineapple & Spice, is built on a cask-aged single-estate Panamanian rum, column distilled and matured in ex-bourbon barrels from green-cut cane at a distillery that burns its own bagasse to heat the stills. The flesh of Queen Victoria pineapples, a small, intensely fragrant variety, is steeped in that rum, the pineapple skins are distilled for a brighter tropical note, and cinnamon and clove are redistilled with rum into a flavor essence that adds warmth, with a touch of toasted coconut rounding it out. It is bottled at 38% ABV (76 proof). The producer describes the nose as refreshing tropical fruit with sweet spice, the palate as mellow pineapple over a light woody base with a rich finish, and calls it a taste of the tropics. Lengthen it with ginger beer, shake it into a pineapple daiquiri, or add a slice of chili for a spicy version.
