Spirited Union Spiced Rum
Spirited Union is the Amsterdam botanical rum distillery founded by Ruben Maduro, which opened a solar-powered 300-square-meter distillery near Amsterdam Central in 2019 and put former gin distiller Marjolein Pot in charge of production. Instead of dosing a base rum with flavoring, the house distills and infuses individual botanicals into cask-aged rum and blends from a library of those distillates, which is how it landed on the Spice & Sea Salt recipe sold in the United States simply as Spirited Union Spiced Rum. The base is a molasses rum from Barbados, aged in cask, and five botanicals are added to it along with organic salt drawn from an ancient seabed. The salt is the unusual move: a small amount sharpens the rum's natural barrel sweetness and spice the way a pinch of salt does in caramel, so the spiced profile reads drier and more savory than the typical vanilla-and-sugar spiced rum. It is bottled at 38% ABV (76 proof). One of the three expressions that launched the range in 2019, it has found a following in espresso martinis, where the salt and spice play against the coffee, as well as in a spiced rum and cola or a hot toddy.
