Về Để Đi (Ve De Di) is a Hanoi distillery founded in 2020 by Quan Hung Nguyen, a poet and hospitality veteran, and Michael Rosen. The name translates roughly as "to return in order to go," and the project began as Vietnam's first dedicated commercial whiskey distillery before growing into a range of liqueurs built entirely from Vietnamese ingredients.
Every bottle starts with a column-distilled spirit made from Red River rice grown in Thai Binh, about 100 kilometers from Hanoi, and is sweetened with sugar from Nghe An in north-central Vietnam. Each liqueur then showcases a single locally grown botanical: cacao nibs from Marou Faiseurs de Chocolat, fermented, sun-dried and roasted from beans grown in six regions of Vietnam; Central Highlands arabica and robusta coffee; green-skinned cam sành oranges from Hà Giang; and coconuts from Bến Tre in the south.
The result is a modern cocktail lineup with a distinctly Vietnamese voice. The Crème de Cacao brings dark chocolate and toasted sesame to a Brandy Alexander or Grasshopper, the Coffee Liqueur is built for espresso martinis and coffee Old Fashioneds, and the Triple Sec drops into any Margarita, Sidecar or Mai Tai that calls for orange liqueur.
