Viva México Añejo is the Vivanco family's own añejo from Destilería El Ranchito (NOM 1414) in Arandas, in the Los Altos highlands of Jalisco. The family has grown agave in Arandas since at least 1929; Feliciano Vivanco and his five sons founded El Ranchito in 1994 and launched Viva México, but spent most of the next thirty years distilling under contract for other brands, so the house label was nearly impossible to find in the United States until Skurnik began importing it. Made under maestro tequilero Sergio Cruz from 100% estate-grown Blue Weber agave matured six to eight years on the family's ranchos at about 6,600 feet, it is roasted 48 to 50 hours in brick ovens, crushed on a roller mill, open-fermented in stainless steel with proprietary and champagne yeasts and deep well water while classical music plays, the family's "Mozart method," distilled twice in copper pot stills, then aged an average of 18 months in American oak barrels and bottled at 40% ABV in a 750ml bottle, kosher certified and additive-free. Skurnik describes tobacco leaf, cinnamon, vanilla bean, almond, Milk Duds, dark plum and maple-walnut candy on the nose, marzipan, burnt orange, malted chocolate and cooked agave on the palate, and a finish of oaky vanilla and crème brûlée with a touch of sea salt.
