Plantation is one of the most widely respected rum houses in the world, and Bardstown Bourbon Company's finish in its barrels was the release that proved rum casks could work for bourbon. Released June 2022 in the Collaborative Series, it takes a 10-year-old Tennessee straight bourbon and rests it a remarkable 23 months in freshly emptied Plantation rum barrels — an unusually long finish for a category where most stop at a few months. Breaking Bourbon found it immediately impressive, and not for the reason you'd expect: where many rum-finished bourbons shove the rum to the front and turn unbalanced, Bardstown somehow perfectly balanced the two — gentle molasses intertwined with sweet oak, dark fruit, fig, and dark chocolate. Expect a nose of brown sugar, molasses, dried fig, and vanilla over the bourbon's caramel and a decade of Tennessee oak, opening into a rich, layered palate where the rum's warm sweetness meets toffee, dark chocolate, dried fruit, and baking spice, with a long, gently sweet finish and a touch of oak dryness. It was successful enough that Bardstown followed it with the acclaimed Foursquare rum finish a year later — Drinkhacker called that one a ratcheting-up of this bottle's success.
