Heigold is Rabbit Hole's high-rye bourbon — 70% corn, 25% malted rye, 5% malted barley — named for Christian Heigold, the German stonemason whose carved 1857 façade still stands in Louisville, at 95 proof. Kaveh Zamanian, a clinical psychologist who was introduced to bourbon by his Kentucky-born wife, founded Rabbit Hole in 2012 and opened the glass-walled downtown Louisville distillery in 2018; Pernod Ricard bought a majority stake in 2019. Heigold is distilled at Rabbit Hole from its own mash — the rye is malted, which softens the pepper into something spicier and sweeter — aged at least three years in wood-fired-toasted, #3-char barrels from Kelvin Cooperage, and bottled at 95 proof. Uproxx: butterscotch, stewed apple, and cinnamon with layered spice. The Whiskey Wash finds the malted rye showing as baking spice and a rounder body than a raw-rye bourbon. Expect a spiced, sweet, medium-bodied bourbon — cinnamon, baked apple, caramel — with a peppery, lingering finish and more grip than Cavehill. Honest note: the Rabbit Hole for rye-bourbon drinkers and the one bartenders use for Manhattans — the malted rye is the distillery's signature trick, and this is the bottle that shows it.
