Ajornada Carvalho Aged Cachaça
Ajornada Carvalho is the aged expression from the modern Brazilian cachaça brand founded by Mauricio Maia and Augusto Lima. Like the rest of the range, it is grown, harvested and distilled on a multi-generational family farm in Minas Gerais, Brazil, where mature sugarcane is hand-cut and pressed within hours of harvest. The fresh cane juice is fermented with wild yeast and distilled in copper pot stills, and the spirit contains no added sugar or additives. Carvalho (Portuguese for oak) is then rested for 12 to 18 months in former Tennessee whiskey barrels that are shipped from the United States to the farm in Brazil, giving the spirit its oak-aged character while keeping the cane base intact. It is bottled at 40% ABV (80 proof). The producer recommends sipping it neat, serving it over ice, or using it in craft cocktails where a barrel-aged cachaça can stand in for aged rum or whiskey. Ajornada's distributor describes the cachaça as organically grown and notes international recognition for its purity and quality. The brand's design-led approach aims to present Brazil's national spirit, the world's third most consumed, to a new generation of American drinkers.
