Almatitán is the estate tequila of the Sandoval family, whose agave farming and distilling in the Valley of Amatitán, Jalisco, spans eight generations; it is produced by father and son Miguel and Florentino Sandoval at NOM 1646, the newly built Destiladora La Roca in Amatitán. The agave is 100% certified organic Blue Weber grown on the family's own estate of more than 800 acres of volcanic, mineral-rich lowland soil, hand-harvested, slow-cooked about two days at low temperature in traditional stone ovens, roller-milled, fermented in open-air stainless steel tanks with wild yeast and deep well water, and double distilled in copper pot stills. The Blanco is bottled at 40% ABV (80 proof) after resting four months in glass, with no additives and no chill filtration. The producer describes orange rind, florals, pepper and honey on the nose with mint, cinnamon and grassy minerality, a palate of sweet agave, lemon and orange citrus and light peppery spice, and a very clean finish of citrus and spice, suggesting it neat, in a Margarita or with a crisp beer. Agave Matchmaker community reviews score it in the high 80s.
