Almatitán Reposado Tequila
Almatitán Reposado comes from the Sandoval family, eight generations of agave farmers and distillers in the Valley of Amatitán, Jalisco, and is produced by father and son Miguel and Florentino Sandoval at NOM 1646, Destiladora La Roca in Amatitán. It is made from 100% certified organic Blue Weber agave grown on the family's own volcanic-soil estate, slow-cooked in traditional stone ovens, roller-milled, fermented in open-air stainless steel tanks with wild yeast and deep well water, and double distilled in copper pot stills. The reposado is aged five months in used Kentucky bourbon barrels, a light touch meant to soften the agave without masking it, and bottled at 40% ABV (80 proof) with no additives and no chill filtration. The producer describes cooked agave, cinnamon, dried cherry, caramel, herbal and grassy notes and a touch of oak on the nose, buttery caramel, olive and a subtle cherry note on the palate moving to citrus and minerals, and a medium, earthy, lightly citrus finish. It is suggested neat, in an updated Old Fashioned or in other cocktails. Almatitán's estate covers more than 800 acres in the Tequila Valley lowlands.
