Calico House is an independent bottler that builds releases around unusual production stories, and this one comes from Black Frost Distilling in New Ulm, Minnesota, co-founded in 2022 by sixth-generation farmer Nate Gieseke and sixth-generation brewmaster Jace Marti. Black Frost sources its grain, water, yeast and even barrel oak from within 180 miles of the distillery, grows the grain on Gieseke's farm, ferments in open-top vessels at ambient temperature for seven days, and ages exclusively in Minnesota-grown oak. The distillery's own blended bourbon runs a wheated mash of 63% corn, 25% malted wheat, 7% malted barley and 5% malted rye; the Calico House bottling takes that wheated bourbon to a full 109 proof (54.5% ABV) in a 700ml bottle. Seelbach's, which introduced the bottling, describes fresh wood, caramel, sweet mint and leather on the nose, spiced chocolate ganache, vanilla, pepper and cinnamon with fig and date on the palate, and a dry, spiced, charred-oak finish softened by sweetness. Retailer notes add dark brown sugar, dried cherry and a cool menthol-like lift.
