This single-barrel straight bourbon from independent bottler Calico House was distilled on January 28, 2021 by Dancing Goat Distillery in Cambridge, Wisconsin, a 34,000-square-foot operation running four stills that has built a reputation for blending and finishing. The barrel is the story: a high-rye bourbon was filled into a virgin French oak cask coopered from 100-year-old trees after the staves cured for 36 months. Calico House then proofed it down slowly, adding water at 70 milliliters per day until it reached what the bottler calls a balance of power and elegance, landing at 122 proof (61% ABV). It is unblended and unfiltered, and Distiller lists it as five years old. Seelbach's tasting notes describe orange peel, French vanilla coffee creamer, dusty caramel and brown-sugar oak on the nose; vanilla custard, cherry pie filling and cinnamon sugar on the palate; and torched citrus, pepper, fresh cherry pie and fig jam on the finish. Retailers note butterscotch, dried apricot and a floral lift. Each 700ml bottle comes from one cask, so character varies barrel to barrel.
