Carlito's Reposado Tequila
Carlito's is a small-label 100% blue Weber agave tequila from NOM 1598 in the Los Valles region of southern Jalisco. The production is traditional in the ways that count: agave cooked in an autoclave, crushed on a roller mill, fermented spontaneously in open stainless tanks with no added yeast, and double distilled in stainless pot stills with copper coils. The Reposado rests in American white oak, long enough to take on a pale straw color and round off the blanco's edges, and it's bottled at 40% ABV. The wood brings vanilla and a little caramel over the same cooked agave, pepper, and mineral core, without turning it soft or sweet. A working reposado: sip it with a sangrita, or use it for a margarita with a bit more depth or an Old Fashioned riff.
