Don Q's most experimental release finishes rum in vermouth barrels — specifically Mancino Vecchio casks, the sweet vermouth brand founded by Giancarlo Mancino (the same bartender behind Rinomato). The base rum ages 5 to 8 years in American white oak, then rests an additional 4 to 6 weeks in those Italian oak vermouth casks, picking up genuinely unusual herbal, wine-like character you won't find in any other rum on the market. Christopher Null at Drinkhacker called Don Q one of the most innovative rum producers in the business for pulling this off, describing a pungent nose of bitter herbs, oxidized white wine, and anise that melds on the palate with coconut, vanilla, and baking spice — "a strange combination... but it works better than you would expect." Wine Enthusiast's Kara Newman found a milder, honeyed profile with savory cedar, sarsaparilla, and curry, with sweet spice and red fruit coming through on the vermouth-influenced finish.
