Don Q's Pedro Ximénez Double Cask is a genuinely scarce release — just 2,000 bottles — from the distillery's Selección Exclusiva program, crafted by Master Blender Silvia Santiago as a showcase of what happens when Puerto Rican rum meets serious European cask influence. The rum rests a minimum of seven years in American white oak ex-bourbon barrels in Ponce, then finishes an additional 11 months in Pedro Ximénez sherry casks imported directly from Spain. That combination shows immediately in the glass: a deep mahogany color with golden amber highlights, and a nose of dried figs, apricots, toasted oak, and sherry wine layered over soft baking spice. On the palate, expect lush raisin, vanilla, baking spice, and oak unfolding into a long, honeyed finish, with some tasters picking up lightly smoked caramelized apple, walnut, dried plum, and shortbread as it lingers. The Beverage Testing Institute awarded it a Gold Medal and 90-point score, and Good Spirits News gave it a rare A rating, calling it pleasant and genuinely regal — both a beautiful sipper and a stellar base for a rum-forward cocktail.
