First Sight Paso Robles Cabernet Sauvignon
First Sight is a certified-organic label launched in early 2024 by Ackley Brands, a family-owned Seattle wine company, with the goal of making organic Paso Robles wine approachable rather than precious. The Cabernet Sauvignon comes from CCOF-certified organic, high-elevation vineyards in the Paso Robles AVA farmed regeneratively, without synthetic chemicals or pesticides, using solar power and electric equipment; the vineyards also hold Sustainability in Practice certification. It is aged in a mix of French and American oak, which contributes cedar and vanilla, and bottled in lighter glass with no foil capsule, a TCA-free micro-agglomerate cork and FSC-certified paper labels. Around 13.5% ABV, it is full-bodied with a deep tannic structure and complex aromatics: black currant, boysenberry and tobacco on the palate framed by the cedar and vanilla of the barrel. The producer pairs it with barbacoa tacos, grilled portobello mushrooms, Chicago-style deep-dish pizza, aged cheeses and flourless chocolate cake, which tells you how versatile it is. 750ml bottle.
