The journey begins with the careful cooking of the harvested plants in shallow pits, fueled by the natural elements of willow and oak. Once tender, the plants are skillfully shredded by axe and knife, allowing their flavors to unfold. A patient and open-air fermentation takes place in underground masonry tanks, infusing the liquid with layers of complexity.
Through the art of traditional distillation in copper pot stills, Sotol Desierto reaches its full expression. The result is a bright and inviting aroma, filled with the invigorating scents of lemongrass, Meyer lemon, new oak, and the earthy essence of wet soil.
