Granja Nómada Ensamble (listed by some retailers as Tepeztate-Espadín) is a 750ml blend of eight-year-old Espadín (Agave angustifolia) and roughly 20-year-old wild Tepeztate (Agave marmorata), hand-selected from nearby farms. Mezcalero Hugo Quinto makes it at his family palenque in San Dionisio Ocotepec, in the Central Valley of Tlacolula, Oaxaca. Piñas are cooked for six days in an earthen pit oven fired with locally chopped oak, crushed with a stone tahona, and fermented in open-air wooden vats for up to 15 days. Distillation is done twice in copper stills, with only the hearts of the first run carried into the second, and the mezcal is bottled at 42% ABV (84 proof) at a facility about ten minutes from the palenque. Reviewer Jonny on Mezcal Reviews found chalky minerals and sharp lemon and lime on the nose, with green apple, nopales, tomatillo and sweet corn on the palate, more complex than its 42% strength suggests. Best sipped neat or in a spirit-forward cocktail.
