Kilinga Bacanora Silvestre
Kilinga is a family-owned, single-estate bacanora brand founded in 2018 by rancher-turned-distiller Rodrigo Bojorquez Bours in Alamos, Sonora, and named after his mother's childhood nickname. Every bottle is made seed-to-bottle from Agave angustifolia pacifica grown on the family ranch: piñas are lowered in a metal cage into an underground clay-and-volcanic-stone oven and roasted four to five days over cured mesquite, crushed with a tahona, fermented two to three days with a local yeast in a temperature-controlled room, then double distilled in steel-and-copper pot stills with a clean second run. The spirit is filtered, proofed and rested at least six months in steel vats before bottling. Silvestre is the young-agave expression, made from plants of seven to eight years and bottled unaged at 40% ABV (80 proof). The producer describes wildflowers, violets, green agave and a subtle violet finish; Drinkhacker rated it A-, finding lemon, white pepper and mint with almost no smoke and calling it a natural-born mixer. Mezcalistas called it enormously expressive. Each bottle is numbered and signed by the maestro bacanorero.
