La Diablada Pisco
La Diablada is the blended, or acholado, pisco from Macchu Pisco, the Peruvian brand founded by sisters Melanie and Lizzie Asher. The name comes from an Andean dance that re-enacts a legendary battle between angels and demons, and the pisco itself is a blend of four of Peru's pisco grapes: Quebranta, the non-aromatic backbone of most Peruvian pisco, alongside the aromatic Moscatel, Italia, and Torontel. Each variety is distilled separately and the four piscos are blended afterward, so every grape contributes its own character instead of being lost in a single run. The sisters have credited their grandmother's guidance in shaping the blend, and the grapes come from a cooperative of women farmers. It's bottled at 40% ABV. Wine & Spirits Magazine calls it wonderfully layered and balanced, with plum, blossom scents, blueberries, herbs, and briny notes weaving together, while Difford's Guide finds clean grape juice, green apple skin, rose petals, and basil on the nose, then dried flowers and ripe melon on the palate, with a dry, lightly bitter finish. It has the aromatic lift for a top-shelf Pisco Sour or Chilcano and enough depth to sip neat.
