Mainland Rum built its reputation bottling some of the oldest, most interesting casks of American rum around — a 10-year Louisiana, a 9-year California, releases from Georgia and Florida — all under founder Seth Benhaim's mission to prove that great American rum deserves the same respect as an independent Scotch bottling. This Minnesota release marks something new for them: their first unaged expression, sourced from Black Frost Distilling and built around Jamaican-style production techniques rarely seen this far from the Caribbean. The rum is distilled from blackstrap molasses, fermented for two weeks in open wooden vats using Schizosaccharomyces pombe yeast, then bottled at still strength — 125 proof (62.5% ABV) — with 40% dunder in the mix, all without dilution or filtration. That combination produces serious funk and ester intensity: expect ripe banana, cotton candy, and pineapple on the nose alongside citrus zest and baking spice. The palate turns rich and oily, layering tropical fruit, cane syrup, white pepper, and fresh herbs over surprisingly refined sweetness.
