Pixari Mastic Liqueur
Pixari Mastic Liqueur is made by the family-owned Monogioudis Stefanos Distillery in Neohorion on the Greek island of Chios, the only place in the world where the mastic tree, Pistacia lentiscus var. chia, yields its aromatic resin, and it carries the Chios P.D.O. designation. The liqueur takes its name from pixaria, which the producer calls the most aromatic variety of mastic tree. It is made from just four ingredients: water, sugar, molasses-based alcohol and natural Chios mastic. The base alcohol is steeped with whole mastic resin for 25 days, then blended with a water and sugar mixture to 26% ABV and bottled unfined and unfiltered, so the liqueur is milky and cloudy with small pieces of mastic suspended in the bottle and a medium-to-full body, with notably less sugar than many mastiha liqueurs. The producer describes an intense mastic flavor and aroma and recommends it neat or on the rocks as an aperitif, as a cocktail ingredient, or in sweet and savory cooking. The US importer notes this marks the first time Pixari has been brought to the United States. Mastiha has been prized since antiquity, praised by Herodotus and Hippocrates, and Chios mastic liqueur remains the island's signature spirit.
