Redwood Empire Emerald Giant Rye Cask Strength is the limited-edition, straight-from-the-barrel version of Redwood Empire's popular Emerald Giant rye, from the distillery in Graton, California in the heart of Sonoma County's redwood country. The 2022 release is bottled at 116.4 proof with no dilution, after a minimum of four years aging in the temperate climate of the Northern California coast.
Emerald Giant is named for the fastest-growing redwood in the world, and Redwood Empire plants a tree for every bottle sold, more than half a million so far. The whiskey is built on a 95% rye mash bill, blending sourced rye with the distillery's own distillate, and the coastal aging keeps the barrel influence gentle so the rye grain and spice stay in front. At cask strength the pine, anise and green peppercorn of the standard 90 proof bottling get considerably louder, with more sweet oak and a longer, warmer finish. It is a bold rye for a cask-strength Manhattan or for slow sipping with a splash of water, and cask-strength batches are produced in small quantities once a year.
