See the Elephant is an amaro di rucola, an arugula amaro, launched in 2022 by founder Kyle Harder and produced at a distillery on the Cilento Coast of Campania in southern Italy, near the ancient Greek city of Paestum and the town of Agropoli. A neutral high-proof spirit is steeped for two to three weeks in arugula grown along the coast, then infused with a secret blend of herbs and spices and homemade caramel, following a generations-old local recipe. It is bottled at 30% ABV (60 proof). The name revives a 19th-century American expression for going out to see something remarkable firsthand, popular during the Gold Rush and the westward trails, and the label was designed by artist Cody Gunningham. The amaro earned 96 points and Double Gold at the Bartender Spirits Awards with a perfect mixability score, 95 points at the 2022 Chilled 100 Spirits Awards, Gold at the 2022 USA Spirits Ratings, 4.5 stars from Difford's Guide, and was named by Brad Thomas Parsons as one of ten essential new-school amari. Judges noted caramel, allspice, mint and orange on the nose with a bubblegum, root beer and peppery arugula finish.
