Seelbach's Private Reserve 10 Year Unfinished Cask Strength Bourbon 125.5 Proof
Seelbach's Private Reserve 10 Year is the Louisville craft-spirits retailer's answer to drinkers who want its sourcing without any secondary finish: a Kentucky straight bourbon aged ten years and bottled uncut, unfiltered and at full cask strength, in this release 125.5 proof (62.75% ABV). Seelbach's, founded by Bourbonr blogger Blake Riber, calls itself a bespoke independent bottler and does not name the distillery, but publishes the mash bill, a high-rye 75% corn, 15% rye, 10% malted barley recipe, and the exact age of ten years and one month. Earlier batches were small, 960 bottles for the first and 608 for Batch 002, and proofs have ranged from 131.4 down to this 125.5 bottling. The producer's tasting notes describe toffee, orange marmalade, caramelized brown sugar and dried fruit, with gingerbread, stewed apples and a rich, viscous body on the palate and nutmeg, tangerine and toasted oak on the finish. A retailer listing for the 125.5 proof release adds dark toffee, charred oak, roasted nuts, dark chocolate, leather and barrel char, and recommends it neat or with a small splash of water. Bottled in Jacksonville, Florida.
