Seelbach's Private Reserve California Cabernet Finished Bourbon
California Cab Finished Bourbon is a Seelbach's Private Reserve series in which the Louisville craft-spirits retailer and bottler founded by Blake Riber rests well-aged straight bourbon in red wine barrels from boutique California producers. The original release used a 75% corn, 15% rye, 10% malted barley Kentucky bourbon from Bardstown, finished four months in a Howell Mountain Cabernet Sauvignon barrel from Aonair Winery in Napa Valley, bottled unfiltered at 130.1 proof and limited to 240 bottles. Batch 003 moved to an Indiana-distilled bourbon (75/21/5 corn, rye, malted barley) aged eight years and eleven months in new charred oak, then one year and two months in California Cabernet barrels, for a total of eleven years and one month, bottled at 113 proof. Proof varies by batch; this release is 119 proof. Across batches the producer's notes are consistent: strawberry jam, molasses and white pepper, with buttered toast, a syrupy, viscous palate, and a long finish of toasted oak and lingering Cabernet fruit. Seelbach's says the secondary finish is meant to add dried fruit and strawberry without overpowering the bourbon. Finishing and bottling take place in Jacksonville, Florida.
