Seelbach's Private Reserve Double Stacked Maple Syrup Cask Finished Bourbon

Double Stacked is a Seelbach's Private Reserve blend of two maple-cask-finished straight bourbons from the Louisville-based craft-spirits retailer and independent bottler founded by Blake Riber. The first component is an eight-year Kentucky bourbon that spent 14 months in maple syrup barrels from Bissell Farm. The second is a five-year, nine-month Indiana bourbon finished in two stages, three and six months, in bruleed maple barrels. The two were then married, stacking the finishes for what the bottler calls layered complexity, and bottled at 111 proof (55.5% ABV). It is a straight bourbon with no maple flavoring or sweetener added; all the maple character comes from the wood. Seelbach's tasting notes describe white pepper, almond, vanilla bean, turbinado sugar, chocolate-covered cherries and maple fudge on the nose, molasses, fresh bread and toasted pecans moving to leather and cracked black pepper on the palate, and a medium finish. Maple finishing has been a Seelbach's signature since its inaugural Private Reserve in 2021, which paired toasted French oak with ex-bourbon maple syrup barrels; Double Stacked doubles down on the maple side of that formula.
