Seelbach's Private Reserve The Beekeeper Honey Finished Straight Bourbon
The Beekeeper is Seelbach's Private Reserve annual honey-finished bourbon, first released in July 2025 by the Louisville craft-spirits retailer founded by Blake Riber. The base is straight bourbon from Ross & Squibb (MGP) in Lawrenceburg, Indiana, made from 75% corn, 21% rye and 4% malted barley and aged five years and four months for Batch 001. The finish is unusual: Seelbach's took 20-year light whiskey barrels it had just emptied, poured about three gallons of raw honey into each, let it soak into the staves for three to four weeks, then flushed and refilled the barrels with bourbon for a four-month rest in Jacksonville, Florida. The honey came from White Oak Pastures, where the bees forage on blackberries, muscadines, apples, peaches, pears and wildflowers. It is bottled non-chill-filtered at 113 proof (56.5% ABV), about 2,400 bottles. Breaking Bourbon scored it 4.5, describing brown sugar, lemon zest and toasted graham cracker on the nose, honeycomb, browned butter and creme brulee on a thick palate, and cinnamon, maple butter and golden honey on the finish. Batch 002 (May 2026) moved to an older, more complex blend.
