Seelbach's Private Reserve Toasted French Oak & Maple Finished Bourbon
Toasted French Oak & Maple was the very first Seelbach's Private Reserve, released in September 2021 by the Louisville craft-spirits retailer founded by Bourbonr blogger Blake Riber, and it remains the line's flagship finished bourbon through ongoing batches. The base is Kentucky straight bourbon distilled in Bardstown from a 78% corn, 10% rye, 12% malted barley mash and aged around four years. Seelbach's then re-barrels it for roughly six months of Florida summer in Jacksonville, splitting the whiskey between toasted French oak barrels and ex-bourbon barrels that previously held maple syrup, then blending at about 60% French oak to 40% maple before bottling at barrel strength, which has ranged from 111.3 to 113.4 proof across batches. Batch 5 was 1,064 bottles; Batch 007 was limited to 684. The producer's notes describe creme brulee, oak and baking spice, vanilla frosting and aged leather, and a long French-toast finish. Breaking Bourbon found the French oak kept the maple sweetness in check, with buttered pancakes and maple sugar candy giving way to rye spice, clove and pepper.
