Rustling Wood, formerly named "Winter," is the darkest, richest expression in SennzaFinne's seasonal amaro lineup — built by Seattle bar professionals Joey and Gillian Diedrick around the question of what to make when nothing's actually growing outside. The answer leans into roots, warming spices, and toasted hazelnuts, a Pacific Northwest crop the Diedricks specifically roast in a wood-fired pizza oven at Delancey, the well-known Ballard restaurant, to bring a real note of char into the rich, supple mouthfeel. Coffee rounds things out, a nod to getting through the Northwest's short, grey winter days. Made in the same small batches as the rest of the range — wild-harvested organic ingredients, hand-bottled, no caramel coloring — it's bottled at 37% ABV, described in-house as rich, nutty, and sultry. Seattle Magazine compared the finish to "a wool blanket in wintertime." The Diedricks note that despite the higher proof, the hazelnuts' natural fattiness smooths out most of the heat. Pair it with Scotch or your favorite sipping spirit, or dip a cigar directly into it for the smoky notes that carry through.
