Shimizu-no-Mai is the export line of Takashimizu, the Akita Shurui Seizoh brewery in Akita City in Japan's snowy north, where the name, meaning dance of spring water, was borrowed from a 1997 sake cocktail created at Tokyo's Hotel New Otani in the brewery's honor; the Pure series launched in the United States in 2009 as a US-only range built on Akita's own rice and water. Pure Dawn is the junmai ginjo in the frosted blue bottle, and unusually it is a blend: junmai daiginjo polished to 45 percent married with junmai polished to 60 percent, both brewed from Akita Sake Komachi, the prefecture's own sake rice, with no added distilled alcohol, and bottled at 15.5% ABV in a 720ml bottle with a sake meter value of +1 and 1.7 acidity. The brewery describes a firm structure with a subtle fruity aroma of apple, pear and melon, a sharp, clean taste, and the character of traditional sake underneath the fruit. Serve it chilled in a wine glass with sushi, oysters, tempura or roast chicken.
