Suncliffe Cultivaro Amaro
Cultivaro is the second release from Suncliffe, the LGBTQ- and woman-owned Arizona botanical spirits company founded by Tom Giddings, Ryan Lawrence and Clare Byrne, and it translates the Italian amaro into Sonoran Desert terms using ingredients sourced in Arizona. Seville bitter oranges, largely from Mission Garden in Tucson, supply the bitterness (about 800 pounds per batch); Medjool dates and Yuma date syrup sweeten it; roasted pecans hand-harvested at Holy Trinity Monastery near St. David give base and body; ponderosa pine inner bark, collected as a byproduct from a miller in Flagstaff, adds tannin and smoke; and grilled nopales, prickly pear cactus pads, bring earthiness. It is small-batch and handcrafted at 27% ABV in a 700ml bottle, launched in March 2025. The producer describes a rich copper color with garnet flashes, a nose of orange zest, raisin, pecan cookie and fresh-cut hay, and a palate of sticky toffee pudding, root beer candy and baklava balanced by marmalade bitterness, moving through sarsaparilla to red rose, evergreen vanilla and spearmint. Forbes called it a small-batch spirit that embodies the soul and flavor of the Southwest. Serve it as a digestivo or in spritzes, Negronis, highballs and Manhattans.
