Tequila Cabal Blanco is the Montes family's additive-free, USDA Organic blanco from Amatitán, Jalisco, in the heart of the Tequila Valley, presented here in the brand's embossed horse-head "bar bottle" fitted with a pour spout for the back bar or the home cocktail station. Long produced at the family's Las Americas distillery (NOM 1480) and now made at their new Destiladora La Roca (NOM 1646) under maestro tequilero Héctor Dávalos, it starts with estate-grown Blue Weber agave matured six years before harvest, cooked about 26 hours in 24-ton brick ovens, crushed on a roller mill, and open-fermented in stainless steel with deep well water, a proprietary yeast and ambient yeasts. It is double distilled in pot stills, first stainless steel and then copper, and bottled unaged at 40% ABV in a 700ml bottle with nothing added. The horse on the glass is a nod to the family's horse-racing heritage, and the bottle's dark hillside scene shows the agave fields of the valley. Expect a clean, cooked-agave-driven blanco built for Margaritas, Palomas and Ranch Waters, with enough character to pour neat or over a single cube.
