West sources individual barrels from Kentucky and Indiana distillers and gives them further time in Virginia's warmer, more humid climate, then bottles one cask at a time at true barrel strength with no coloring, filtering, or additives. This is a hand-picked single barrel, Cask #27091: a 9-year straight bourbon bottled at a hefty 127.5 proof (63.75% ABV). West's older stocks run brash and oaky with a peppery kick and a creamy, coating mouthfeel, and a 9-year at this proof sits right in that pocket, with enough age for deep caramel and toasted oak and enough heat that a few drops of water open it up rather than flatten it. One barrel, one bottling, and when it's gone it isn't coming back.
