The Rums of Mexico is a project from PM Spirits, the importer behind Alambique Serrano and 5 Sentidos, built to bottle the traditional cane spirits of Veracruz, Oaxaca, and Jalisco that locals call aguardiente, cañita, or simply ron. Each release names the farmer who made it, the village, the cane, and the still, and nothing is added after distillation. Caldo comes from Orlando Vásquez in Tlatetela, Veracruz, a second-generation cane farmer and first-generation distiller. Caldo means broth, and that's the base: fresh-pressed juice from two local cane varieties blended with rehydrated panela, fermented with native yeast, and run through a wood-fired four-plate copper column. Bottled at 52.3% ABV, it's layered and savory, with banana, charred corn, white pepper, mandarin, and a smoky, brothy depth that sets it apart from any Caribbean rum.
