The Rums of Mexico Caña Dura Rum
The Rums of Mexico is a project from PM Spirits, the importer behind Alambique Serrano and 5 Sentidos, built to bottle the traditional cane spirits of Veracruz, Oaxaca, and Jalisco that locals call aguardiente, cañita, or simply ron. Each release names the farmer who made it, the village, the cane, and the still, and nothing is added after distillation. Caña Dura is Marcos López's other bottling, from the pale yellow-green Caña Dura variety that dominates the fields around Cosautlán de Carvajal, Veracruz. The fresh juice gets a long fermentation and a more aggressive run through the copper column, and it's bottled at 46.7% ABV. It's crisp, fruity, and refreshing: cucumber, watermelon rind, lemon, rainwater minerality, and a saline edge, with a medium-length earthy finish. Made for a daiquiri or a Ti' Punch.
