Tierra de Ensueño Rosa Añejo is a single-barrel, additive-free añejo from the family-owned Ensueño estate in the southern Highlands of Jalisco, made in small batches at NOM 1580 by master distiller Sergio Cruz and master blender Oscar Vázquez. The producer starts with fully mature 100 percent blue Weber agave, cooks it in stone and brick ovens, roller-mills it, ferments open-air in stainless steel with deep-well water and a proprietary yeast, and double distills in copper pots. The Rosa Añejo is then barrel-aged for nearly two years, resting first in used bourbon barrels before moving to an exceptional red wine cask that gives the tequila its rosy hue and the cherry and dried-fruit character reviewers on Agave Matchmaker describe, where previous sold-out batches of the red wine cask añejo scored 90 to 92-plus points. This batch is bottled from a single barrel at 43.2% ABV with fewer than 250 bottles produced, each numbered, in a 750ml bottle with the brand's sunburst label and the tagline for the dreamers. Artisanal, true tequila with nothing added, and one of the few rosa-style añejos made without sweetening or coloring.
