Trascendente Mezcal Ensamble
Trascendente Ensamble blends three agaves, Espadín, Tobalá and Cuishe, into a single 100% agave joven mezcal from the Tlacolula de Matamoros valley of Oaxaca. Mezcal Trascendente was launched in 2020 by the Bianciardi-Salcido family and is made under a fifth-generation maestro mezcalero using agaves grown by native communities, sustainably sourced Sierra Juárez wood and spring water from the UNESCO-protected Yagul site. The house limits combustion smoke during cooking so agave and fermentation lead, ferments slowly and wild with natural yeasts, and double distills in copper pot stills with careful heads-and-tails cuts. It is bottled at 40% ABV (80 proof). The producer describes an herbal-floral profile with a refreshing citrus edge, cooked agave, delicate caramel and a saline note, a soft palate and an elegant finish of minerals, citrus and a light smoky touch, suggesting it alongside fatty, salty or spicy dishes. Falstaff scored the Ensamble 96 points at its 2025 Agave Trophy tasting. Trascendente joined Spiribam America's portfolio for its 2025 US launch and funds hummingbird conservation in Mexico.
