Ve De Di Crème de Cacao Liqueur
Ve De Di Crème de Cacao is a Vietnamese chocolate liqueur from Về Để Đi, the Hanoi distillery founded in 2020 by poet and hospitality veteran Quan Hung Nguyen and Michael Rosen, whose name translates roughly as "to return in order to go." The cacao comes from Marou Faiseurs de Chocolat, Vietnam's best-known bean-to-bar chocolate maker, which sources beans directly from farmers in six regions of the country; the beans are fermented for five days, sun-dried for ten and slowly roasted into nibs with a high cacao butter content, then macerated in a column-distilled spirit made from Red River rice grown in Thai Binh and sweetened with sugar from Nghe An. The producer describes toasted cocoa nib, soy sauce and peanut hard candy on the nose, a palate of dark chocolate, toffee, honeycomb, toasted sesame and chocolate fudge, and a subtly piquant finish with a touch of chili, bottled at 29% ABV in a 700ml bottle. Pour it in a Brandy Alexander, a Grasshopper or a chocolate martini, add it to an espresso martini for a mocha twist, or sip it chilled after dinner.
