Viva México Blanco is the Vivanco family's own tequila from Destilería El Ranchito (NOM 1414) in Arandas, in the Los Altos highlands of Jalisco. The family has grown agave in Arandas since at least 1929; Feliciano Vivanco and his five sons founded El Ranchito in 1994 and launched Viva México, but spent most of the next thirty years distilling under contract for other brands, so the house label was nearly impossible to find in the United States until Skurnik began importing it. Made under maestro tequilero Sergio Cruz from 100% estate-grown Blue Weber agave matured six to eight years on the family's sixteen ranchos at about 6,600 feet, it is roasted 48 to 50 hours in brick ovens, crushed on a roller mill, open-fermented five to eight days in stainless steel with proprietary and champagne yeasts and deep well water while classical music plays, the family's "Mozart method," then distilled twice in copper pot stills and bottled at 40% ABV in a paper-wrapped 750ml bottle, kosher certified and additive-free. Skurnik describes tropical fruit of guava, peach and dragonfruit with lemongrass, fennel and menthol on the nose, and a dense, silky, oily palate of cooked agave, parsnip, orange peel, vanilla and white pepper with a slate-like mineral saltiness.
