Saint Benevolence Aged Rum Clairin
Saint Benevolence is a Haitian clairin made at the Dorcinvil Distillery in Saint Michel de l'Attalaye, the town in Haiti's Artibonite department that clairin drinkers consider the spirit's grand cru, under master distiller Dr. Rev. Gueillant Dorcinvil. Clairin is Haiti's heritage cane spirit, made in small batches from local cane with no appellation rules, and Saint Benevolence follows the traditional method in full: a field blend of indigenous cane varieties is hand-harvested and crushed in a mechanized press, and the first-press juice is fermented spontaneously with native yeasts for eight to ten days. A second batch of first-press juice, bagasse and all, is boiled down into syrup and fermented separately with ambient yeast, and the juice and syrup washes are distilled separately in handmade 200-liter copper pot stills before being blended and bottled in Jacksonville, Florida. Clairin is almost never oak-aged, and this one began as an experiment: 18 to 22 months in new American oak barrels at varying char levels, bottled at 50% ABV (100 proof). The producer describes nougat, fresh guava, dried coconut and pineapple skin on the nose, with candied tamarind, coconut cream and clove on the palate. Production is limited.
