John Jameson was a Scot who arrived in Dublin in 1780, when the city held over a hundred breweries and distilleries, and took charge of the Bow Street Distillery — first as general manager, then as owner by 1805. His signature innovation came from the taxman: between 1785 and 1825, duty was levied on malt as well as spirit, so Jameson began experimenting with mash bills of malted and unmalted barley. Dubliners loved the result so much that imported Scotch struggled to sell in the city, and the pot still style he helped define became Ireland's own. By the 1880s Bow Street sprawled across nearly six acres — a "city within a city" with its own coopers, blacksmiths, and doctors. The family motto on every bottle, Sine Metu ("Without Fear"), was reportedly awarded to Jameson ancestors for bravery against pirates in the 1500s. Survival took collaboration: by the 1960s only a handful of Irish distilleries remained, and in 1966 Jameson merged with Powers and Cork Distilleries to form Irish Distillers, moving production to the modern Midleton Distillery in County Cork in 1975. Today it's the best-selling Irish whiskey on earth by a wide margin — triple distilled, blended from pot still and grain whiskey, matured in ex-bourbon and sherry casks.
